Depends on the medium! most of my offerings can be done in 5-10 minutes. Watercolour will have to be given a few minutes to dry while marker no time at all. The amount of details or people in the illustration also contributes to time. Many folks opt to get them as a couple or with a friend for example.

I can, however there is a layer of complication to this request. When I do it from life I can have folks line up, I know exactly who to give it to right away and they can see their likeness being made and recognize which illustration to come back for if necessary. When it is done from a photograph I often require an assistant to take down names, keep my photographs in order and turn away guests when I have a full que because "it looks like there is no line". While it is more freeing for the guest it adds a few jobs for me. 

While I have painted kids before, it is usually a tall order to ask them to remain in one place long enough to be painted. It is possible but if you have an event with a lot of children I recommend the least detailed options possible or to go the cute caricature route since kids are more accustomed to waiting for that kind of a drawing and are able to sit down and kick their feet. 

To increase how many sketches can be made for your event, your best bet is to ask for multiple artists or to request a simplified style. However, while we should always scale the supply to meet demand, one of the attractions to this type of activation is that it feels very special and very human. Different from photography or AI, to be drawn is to trust someone to look at you and take time out of their day to create something for you. And that is a very special thing that folks take pleasure in waiting for.
